Il est pr\u00e9par\u00e9 avec de la viande de cerf effiloch\u00e9e, assaisonn\u00e9e de sel, de jus d'orange acidul\u00e9e, de coriandre et d'oignon. Il se mange avec des tortillas de ma\u00efs, des haricots noirs et de la sauce habanero. Les yucat\u00e8ques mangent ce plat le jeudi, une tradition qui perdure depuis plusieurs si\u00e8cles, quand la chasse et la consommation de cerf \u00e9taient courantes.
