It was primarily offered as a gesture of gratitude to the gods for bountiful harvests, a tradition that continues to be preserved through the years. This Yucatecan snack involves a lengthy preparation process, where the corn is buried for three days. A \"pib\" (oven in the ground) is created, and stones and firewood are placed and lit. The corn is then added along with aromatic herbs, which give it its characteristic brown colour. Finally, it is covered with earth and carefully monitored to prevent any leakage. It is left to cook for three days and then unearthed, offered, and savoured as a 100% Yucatecan delicacy.
