Among the dishes they prepare and bury every day are relleno negro, mondongo a la andaluza, cochinita pibil, queso relleno, and San Sim\u00f3n Tixkokob-style. One of their special dishes, also cooked underground, is the venison pipi\u00e1n. It consists of pieces of venison cooked in water with pumpkin seed sauce, seasoned with tomato, epazote, house spices, and lard, accompanied by handmade tortillas, French bread, and chilli. The white-tailed deer used for the dishes at Pueblo Pibil Restaurant are raised on a farm and sold under the necessary permits.
