This recipe is preserved by groups of women and men who strive to keep the traditional recipes of the Mayan region alive. According to Mayan linguistics, kots'ob is a verbalized noun that comes from \"k'ots',\" which means to roll or wrap. In the context of tamal preparation, it refers to the spreading and wrapping of the masa (dough) with mak'ulan leaves. The filling consists of white ibes beans, along with scallions, ground pepita (pumpkin seeds), and chilli, which are mixed together before being integrated into the tamal. There are four cooking methods for preparing kots'ob: steaming, baking, frying, and al pib (cooked underground), and it can be cooked to a golden or regular finish depending on personal preference. You can find this dish at the traditional market in Espita and with some traditional cooks who prepare it in the municipality. One of them is Mrs. Mar\u00eda Eusebia Trejo Canul, better known as Do\u00f1a Chica, who sells it at her home on Calle 28.
