Located inside the Santiago Market, La Reina Itzalana offers a variety of Yucatecan dishes, including broths, soups, panuchos, salbutes, empanadas, tamales, and the famous empanadas de pib. On this occasion, they present the \"chayadzules,\" which have been around for over 15 years. During the Holy Week, many Yucatecans abstain from eating meat, and this option is designed to meet that need. It combines the base of a salbute with the addition of chaya, along with elements from papadzul, hence the name given by its creator, Jos\u00e9 Brice\u00f1o. The tortilla is made with nixtamalized corn dough, flour, salt, and the added ingredient: chopped chaya mixed with the dough to enhance the flavour. After frying the tortilla, it is topped with sliced hard-boiled egg, pickled purple onion, avocado, and what makes this dish unique is its bath of papadzul cream and ground pumpkin seeds. Tomato sauce and habanero chilli are added, too. Although originally intended for a specific annual season, this dish is now available year-round in your favourite branch, whether it's the one in the Santiago Market or the one located in the San Luis Chuburn\u00e1 neighbourhood.<\/p>
