The vegan Polc\u00e1n emerges through the Polc\u00e1n Fair, which aims to make this dish a gastronomic icon representing Pist\u00e9, where it took place in September 2022. Choko Coffee was awarded first place for innovating this dish with a vegan twist. It is prepared with white corn masa shaped into an oval with a filling of white beans and sikilpak. It is then fried with vegetable oil until golden on the outside. Once ready, it is opened in the middle to add the filling, which consists of a mix of diced saut\u00e9ed vegetables such as chayote and carrot. It is served with purple onion and roasted tamulated chilli for a flavorful experience. This well-thought-out dish aims to cater to vegans and vegetarians as well. It is for everyone, so don't miss trying it at Choko Coffee in Pist\u00e9 or at Yaxkin restaurant in Xocempich.<\/p>
