Located in the southern part of the city of M\u00e9rida, Xcalach\u00e9n was popularly known as a neighbourhood where you could find \"chicharra\" whenever you had a craving. Due to its growing fame, many residents of this neighbourhood opened their doors to sell this dish. Nowadays, you can find \"chicharra\" in different places throughout the state; however, reference is made to the \"chicharra\" of Xcalach\u00e9n because they were one of the pioneers and the most popular initially. You can still find a couple of stands in the neighbourhood. \"Chicharra\" is made from pork meat or skin fried in its own fat and seasoned with salt. It is mixed with pork rinds, \"puyul\" chunks, \"kastac\u00e1n,\" \"buche,\" entrails, liver, and ear. It is accompanied by local bitter orange, habanero chilli, and cabbage. It is typically eaten in tacos, incorporating all the mentioned ingredients, and it's ready for you to enjoy its delicious flavour!<\/p>
