Yucatan celebrates Janal Pix\u00e1n with aromas and flavours, and one of the representative snacks during these festivities is the xec; it is a typical salad made with jicama and some citrus fruits such as mandarin, grapefruit, and \"china,\" the name for sweet orange in Yucatan. The jicama is diced into bite-size pieces and the citrus fruits are peeled and sectioned one by one; the pulp of the grapefruit is usually removed, as the skin of the sections is sour. Once you have the ingredients ready, you add bitter orange juice or lime, chopped cilantro, salt, and ground chilli to taste. Finally, you \"make xec\" or mix it all together and it's ready to eat. It is a fresh snack that is used as an offering and is present on the altar in honour of the faithful departed, but it is also part of the seasonal preparations in Yucatecan homes and is usually enjoyed after meals or in the afternoons.<\/p>
