Another important ingredient is the white seasoning used to marinate the meat, which is a blend of spices used to season this and several other dishes in the state. After slow-roasting the three meats with onions, garlic, and xkatik chilli, they are combined in a pot with capers, chickpeas, raisins, and saffron; optionally, ball cheese can be added.
