The restaurant \"Pizza Neo\" is located on the end of Paseo de Montejo and offers a fusion of New York, Italy, and Yucatan cuisine. Its name comes from the Neo-Mayan architectural style that the brand was inspired by, creating a gastronomic fusion of these three places. The Haltun pizza is an artisanal pizza that uses ingredients from the Yucatan state. It is made with sourdough dough, which is a mother dough with a 16-hour rest, local heirloom tomato sauce brought from the town of Yaxunah, pork meatballs made with hairless pig meat, and fresh mozzarella cheese with ranch milk. The name of the pizza is associated with the name of the ranch where the hairless pigs are raised, which are fed organically to make the meatballs. Pizza Neo has an air-conditioned space and an outdoor area so that you can choose the best place to taste their delicious pizza, or if you prefer, they have a pizza cart where you can buy pizza slices without having to enter the restaurant.
