One of the delicacies you can find in Yucatan are castac\u00e1n sandwiches. This meat is obtained from a cut in the belly of the hairless pig, which is previously fed only on huaxin forage and corn, to give it that flavour, colour, and texture that characterises it. One of the places where you can find this sandwich is at Wayan\u00e9, founded in 1991, and for thirty years they have been preparing the castac\u00e1n sandwich, to which they later added cheese, which was the ingredient that led to the success of the sandwich, as people began asking for this dish, which they also started preparing with egg. Currently, Wayan\u00e9 has 31 daily dishes at its four locations, but the favourite is still the castac\u00e1n with cheese. To go along with your sandwiches and tacos, they have their own kut sauce, made with habaneros and native lemons from the region.<\/p>
