This traditional dish brings together a diversity of Yucatecan ingredients, and is a type of tamale. To prepare the dough, pork lard and salt are added, as well as chopped chaya leaves and boiled egg. It can also include a creamy pumpkin seed paste, or sikilpak, inside. All of this is wrapped in a banana leaf and placed in a tamale steamer to cook over the fire.
