This drink is characteristic of the eastern and milpa area of Yucatan. Xcaita is a type of squash, which is planted by farmers at the same time as corn, so it can be harvested during the months of August and September, when the squash can already be seen as green and soft. For this drink, the xcaita is cut into small cubes, while the corn is peeled, cleaned, and the kernels are cut off, since it is a very tender corn and cannot be shucked. Then, these two ingredients are cooked together with sugar. The result is a sweet drink that is consumed in the morning or afternoon as an appetizer. It can be served hot, at room temperature or cold. It is served in a gourd with the xcaita and corn cubes, and with the help of a spoon, you will eat these little pieces that are left at the bottom, both with a soft consistency that dissolves on your palate.<\/p>
