Slow Food Yucatan is an international organization that promotes local food production, the conservation of regional culinary traditions, and healthy eating for everyone. The philosophy of Slow Food is that food should be good, clean, and fair for everyone, so they follow the following criteria. Good: made with local and seasonal products, so it is fresh and healthy. Fair: that it is accessible to anyone, through a link of respect between the dignity of farm work and the diner. As a result, good, clean, and accessible food is obtained for all people, celebrating, respecting, and promoting at all times, the diverse cultures, traditions, and culinary knowledge of those who reside in Yucatan.<\/p>
